A Newfound Love



So I tried spaghetti squash for the first time last night and I loved it!!

I think it's fabulous because it can be a substitute for pasta, and it's way better for you than real pasta.

I've made a new holiday today. Today is National Spaghetti Squash Appreciation Day. Hooray!

oh my goodness! spaghetti squash is so my favorite! my mom and i love it! I will have to give you my favorite recipe for it... it has lima beans balsamic vinegar and garlic... and some other stuff mmmm so yummy! I am going to have some when I come home from florida!

I cut it in half and put it in a little water and boil it until it gets stringy... I can give you my recipie later!

My way is similar Rachel - I cut it in half and put it in a 13 x 9 dish with some water in the bottom, then stick it in the oven at 375 for a while...you'll know when it's done, because you take a fork and brush the inside of it, and it comes off all stringy. MM!!

I love spagetti squash too and have also recently discovered it. I like to toss it with olive oil and roasted red peppers and top with goat cheese or parmesan.
